I did something this morning that I haven’t done in years. I made an old-fashioned, Campbell’s Tomato Soup meatloaf. I was up at 3:00a.m., full of energy, so I decided to do something more constructive with my time than play solitaire.
It turned out so good, I had to eat a little slice before it got cool enough to put it in the ‘fridge. I’ll have more for dinner, but I’ll have to make some honest-to-God mashed potatoes with butter to go with it. I’ll peel them, too. It isn’t that I don’t like them with the peelings, it’s that I prefer them the way Grandma made them, peeled, cooked not too much, and with so much real butter, they were a little yellow. Remember those potatoes, before we all started eating the peelings to give us more fiber and became frightened of butter?
I’m feeling rebellious. I’m seventy-seven years old. I’ll eat butter if I want, so there!
