GRANDMA WOULD BE PROUD

I did something this morning that I haven’t done in years. I made an old-fashioned, Campbell’s Tomato Soup meatloaf. I was up at 3:00a.m., full of energy, so I decided to do something more constructive with my time than play solitaire.

It turned out so good, I had to eat a little slice before it got cool enough to put it in the ‘fridge. I’ll have more for dinner, but I’ll have to make some honest-to-God mashed potatoes with butter to go with it. I’ll peel them, too. It isn’t that I don’t like them with the peelings, it’s that I prefer them the way Grandma made them, peeled, cooked not too much, and with so much real butter, they were a little yellow. Remember those potatoes, before we all started eating the peelings to give us more fiber and became frightened of butter?

I’m feeling rebellious. I’m seventy-seven years old. I’ll eat butter if I want, so there!

I’ve always been “fluffy” and went on a diet while I was very young. Over the years, I’ve pretty much given up red meat, pork, fried foods, anything with sugar, and . . . butter. Now, I’ll admit to an occasional lapse, but it was truly, only occasional. I’m still “fluffy,” so what good did it do?

Let’s see, I need another vegetable to go with my meat loaf and buttery mashed potatoes tonight. H-m-m-m. I know, I’ll have an ear of corn. I think I’ll eat the whole ear. There’s a lot of fiber in corn on the cob, and I’ll put some butter on that, too.

I also have a quart of healthy blueberries. I bought them with “power smoothies” in mind, but I might make a cobbler this afternoon. Right now, I’m getting sleepy.
